I'm a record producer and a chef.
I have a new
ep out. it's called
'douce'.
it's released with a pastry:
jaffa 'douce' laffa
middle-eastern style fluffy flatbread filled with white chocolate, pistachio butter and pine nuts!
DOUGH
1 teaspoon of salt (actual teaspoon, not the measurement kind)
1 teaspoon of dry instant yeast
1 teaspoon of freshly ground cardamom (optional for losers)
2 teaspoons of sugar
2 spoons of olive oil
3 spoons of yoghurt
1/2 a “glass” of warm water
3 “glasses” of flour
FILLING
2 white chocolate bars (or any kind of chocolate)
a handful of pine nuts
some pistachio butter diluted with milk (I used oatly)
(if this last ingredient seems overwhelming or hard to get
or expensive, you have my blessing to skip it)
combine all dough ingredients (except salt and flour) in a bowl, and start mixing using a whisk or a fork.
(yeast, water, olive oil, cardamom, yoghurt, sugar.)
add flour slowly for a uniform texture. around halfway you’ll need to change to a spatula and keep mixing until you reach a “shaggy dough”. when all the flour is in, add the salt.
transfer dough to a well-floured surface and start kneading. don’t hesitate to add flour if you get a sticky feeling.
after around 6-7 min of kneading, shape into a ball and place it in a big bowl covered in plastic foil. let rise for around an hour or until the dough has doubled in size. divide into 4 equal-ish pieces and shape them into balls. let rise for 15 min. play
the ep again.
meanwhile, grate the chocolate, prep the pistachio butter (if using) and roast some nice pine nuts with olive oil and salt because you’re the best.
with oily hands, open each ball of dough into a thin-ish disc, around half a centimeter thick, and place on a hot, slightly oily skillet.
when you see bubbles form, add the fillings immediately and fold the dough.
let it get nicely charred on both sides, don’t be a wuss. take it off the heat before it burns but not a lot before if you know what I mean.
ready!
with powdered sugar for cool kids.
